At mealtimes, two very different things can harm the people you support: unsafe food, and food a person cannot safely swallow. This course gives support workers a practical, in-scope approach to both — safe food handling, and safe mealtime support for people with swallowing difficulties.

Across six short lessons you will cover the temperature danger zone and the 2-hour/4-hour rule, cross-contamination, storage and allergens, dysphagia and mealtime management plans, the IDDSI framework for modified food and thickened fluids, safe positioning and supervision, and recognising and responding to choking — with a realistic scenario in every lesson and a printable quick-reference card.

Written for busy care teams in plain Australian English, and grounded in FSANZ food-safety standards, the NDIS mealtime management framework, IDDSI and ANZCOR first aid guidance, cited in each topic.

Scope: This is general food-safety and mealtime-support education for care workers. It is not accredited food-safety training, a speech pathology or dietetics qualification, or accredited first aid, and it does not replace a person’s mealtime management plan. Learners must follow the person’s plan, their training and their organisation’s policy, and seek advice from the speech pathologist, dietitian or nurse for anything outside routine support.
